On their way to the Bobcats national championship in 2023 Quillan scored two goals to advance to the final in a game against Michigan. His sophmore season in college saw him put up 38 points in 41 games and in his final season of college hockey he was over a point-per-game player with 46 points in 39 games played."

Jacob Quillan scored the overtime winner ten seconds into the extra frame to deliver Quinnipiac its first NCAA national championship in 2023. He scored two goals to reach the title game against Michigan and produced 38 points in 41 games as a sophomore and 46 points in 39 games as a senior. He earned Frozen Four Most Outstanding Player honors and the ECAC Gladiator Best Defensive Forward Award and second-team All-ECAC recognition. Quillan signed a two-year entry-level contract with the Toronto Maple Leafs, posted 18 goals and 19 assists in 67 AHL games, and made his NHL debut on Jan. 25, 2025.
