Sea & Soil opened in Brooklyn’s 11217, an area known for high-end retail and fitness businesses, yet the shop offers worker-owned co-op dining centered on sandwiches. Founders Gabby Gignoux-Wolfsohn and Noah Wolf met while working at a food pantry at the Center for Family Life in Sunset Park. They began selling sandwiches during the first summer of the pandemic from a folding table near Prospect Park, aiming for sandwiches that were worker owned rather than a temporary COVID idea. They later sold at the Grand Army Plaza Greenmarket, then moved to a small Carroll Gardens space using GoFundMe, savings, and loans from friends. The Atlantic Avenue location followed a $400,000 loan from Working World, which supports worker-owned cooperatives.
