Machetes, a Mexico City street food establishment, has transitioned from pop-up status to a permanent location inside the Jupiter NEXT Hotel as of February 15. The restaurant specializes in machetes—giant quesadillas made on handmade tortillas the size and shape of machete blades, filled with up to four guisados (stews). Owner Diego Palacios created the restaurant to recreate the authentic Mexico City experience he enjoyed growing up, as such cuisine was unavailable in Portland. The colorful tortillas are made with nixtamalized masa infused with ingredients like cilantro, ancho chile, and hibiscus. The menu features approximately seven guisados, many based on recipes from Palacios's grandfather who owned a taco stand, including huitlacoche, suadero, and chicken tinga.
