Westminster City Council is launching a three-month trial that involves installing air purifiers in restaurants to combat air pollution from cooking. This project targets particulate matter (PM2.5), a significant concern as cooking is the third largest source of such emissions in the borough. Participating restaurants include those in Mayfair, the West End, St John's Wood, and Victoria. Head Chef Eve Seemann hopes the data collected will reveal peak emission times and improve practices, while the council aims to engage the hospitality sector in addressing air quality and public health challenges.
