A five-course botanical dining experience will be held at NORTH Restaurant in The Address Sligo on Friday, June 12 at 6pm. Drumshanbo’s The Shed Distillery of PJ Rigney partners with The Address Sligo to create a curated journey through Irish flavor, craft, and creativity. Each course is paired with a bespoke cocktail made from the Drumshanbo Gunpowder Irish Gin portfolio. The gin’s 12-botanical profile includes vibrant citrus notes, herbaceous juniper, oriental spices, cooling aromatics, and a signature smoky character from Chinese gunpowder tea. The menu features fresh seasonal ingredients, locally caught seafood, and slow-cooked meats, with signature pairings ranging from refreshing citrus serves to richer, spirit-forward cocktails.
