"Led by Ollie, José Lizarralde Serralde (ex-Relæ and Nicos) and Alejandra Juarez (ex-Estela and Máximo), Cometa will showcase British seafood through a Mexican lens, taking inspo from popular CDMX spot Contramar. As well as a range of raw plates, including ceviches and aguachiles, alongside dishes like crab chilpachole rice with brown butter and chive and lobster with chintextle and smoked butter sauce. The drinks list will feature tepache, agua fresca, spicy margs and mezcal Old Fashioneds."

Carousel's Fitzrovia wine bar will be converted into Cometa, a Mexican seafood restaurant opening in February 2026 at 19-23 Charlotte Street, London W1T. The concept builds on years of Mexican influence and a strong guest-chef residency history, applying Mexican techniques and flavours to British seafood with inspiration from CDMX's Contramar. The team is led by Ollie alongside José Lizarralde Serralde and Alejandra Juarez. The menu will include raw plates such as ceviches and aguachiles, crab chilpachole rice with brown butter and chive, and lobster with chintextle and smoked butter sauce. Drinks will feature tepache, agua fresca, spicy margaritas and mezcal Old Fashioneds while the guest chef programme continues.
