The Big Brine is a newly created festival dedicated entirely to pickling and fermentation, taking place at Hackney Bridge on September 12-13, 2026. Founded by Clarice Downes and Emma Winstanley, the self-funded event will showcase artisanal kimchi makers, experimental fermenters, and renowned UK chefs preparing vinegary dishes. Notable participants include Mob Kitchen's Ayala Daly, who will host a dedicated demonstration stage. The festival combines culinary education with entertainment, featuring live DJ sets and drag performances on Saturday night. Tickets are priced at £20 and go on sale April 28. This follows London's existing fermentation-focused event at Deptford's Dog & Bell.
