This tiny SF Peninsula sushi restaurant has a brilliant new business model
"All the restaurants in the Bay Area serve the same items, pretty much. So we just added some fusion items, and then just wanted to be different from other people."
"At the build-your-own-sushi-box restaurant, rows of colorful rolls are laid atop a refrigerated cold plate behind a glass pastry case. Each piece is between $2.35 and $3.25, and you can fill your personalized box to your heart's content. Every single piece can be different."
Buri Buri is a build-your-own-sushi-box restaurant in Burlingame founded five years ago by San Francisco-raised friends Anne Li, Katrina Fang, and Nikki Ma. The trio initially operated as a food truck selling teriyaki chicken, Japanese curry, and sushi rolls before opening their first brick-and-mortar location in December. Li, the main chef with 15 years of sushi experience, designed the customizable concept to differentiate from competitors offering similar items. Customers select individual sushi pieces priced between $2.35 and $3.25 from refrigerated displays and fill personalized boxes. Fresh rolls are continuously prepared throughout the day, and the restaurant offers fusion items alongside traditional options. The restaurant attracts diverse clientele including teens and families during lunch service.
