"I was looking at the world of baking, and it felt like we were all doing a lot of the same things. I looked at this incredible institution that is Claridge's and decided it would be nice to go back to doing old-school, British baked goods. When you look at the Union Jacks hanging outside and the doormen, it just seemed to fit."
Richard Hart, renowned baker from San Francisco's Tartine, has opened a new bakery at the iconic Claridge's hotel in London. The bakery showcases classic British baked goods and nostalgic treats from the 1980s, including ice fingers, walnut whips, Jammie dodgers, malt loaf, Bakewell tarts, and French fancies displayed in glass cases. Hart deliberately chose to move away from the contemporary trend of artisanal sourdoughs and French patisseries that dominate the baking world. Instead, he aimed to create a space that honors traditional British baking heritage, complementing Claridge's established institutional character and aesthetic.
