Chef Parminder Singh curates the menu, drawing on experience at Delhi's Oberoi Hotels, Buckingham Palace, MasterChef: The Professionals and as opening Head Chef at Indian Accent in Mayfair. The menu pulls flavours from across Asia and mixes new discoveries with familiar favourites. Dishes blend Indian street-food techniques with pan-Asian ingredients, such as Dahi sev puri with wasabi and rose water, spicy chicken dumplings with garlic and chives, bang bang cauliflower with sriracha mayo, dry-burnt garlic pepper prawns, and 1990s chilli chicken.
