The Team Behind Paulie Gee's Is Opening a Wicker Park Dive Bar
"I finally get a chance to dive back into things outside of pizza,"
"Not that Paulie's ever stuck to the original format of pizza, but the ability to not have something finished on a piece of dough is going to be a lot of fun for me."
"To be honest, I'm so excited to get almost out of food. I'm just excited to get back into my lane. No more kids. No more pizza. Let's go."
"I've always just wanted to have that comfortable third space, neighborhood-type of bar."
Tony Dezutter, William Ravert, and Derrick Tung formed Tung & Cheek Hospitality to open Alley Cat, a dive bar at the former Takito Kitchen address, scheduled to open in January 2026. The partners will continue operating Paulie Gee's while shifting focus to the new bar, with staff prepared to manage the pizzerias. The food menu will be limited to about six snack-driven items tested at pop-ups, including fried potato wedges with chives and black walnut aioli, a pickled-vegetable 'Girl Dinner' platter with bread and a dirty martini, and a pork chop. The bar draws inspiration from Revel Room, Queen Mary, Spilt Milk, and California Clipper, and will operate from 5 p.m. to 2 a.m. daily.
