Quality Bistro in Midtown Manhattan charges $38 for a table-side Butter Service Garni. The service includes house-made whipped butter crafted from Battenkill Valley Creamery cream and yogurt cultures, prepared similarly to butter at Michelin-starred Moss Restaurant. The butter is presented in a giant crock and spread on a marble slab, then finished with fleur de sel, chopped shallots, piment d'Espelette, and freshly ground pepper. The platter also contains grilled Filone bread from Sullivan Street Bakery, radishes, and cornichons. The offering arrives with hors d'oeuvres such as jambon cuit, mushroom duxelles, leeks vinaigrette, and a hachée Basquaise.
