For the first few years, he showcased his collection online and through pop-up events until finally opening a physical location in 2018. At first, the museum was supposed to be another pop-up only meant to last a few months."

The U.S. Pizza Museum began as Kendall Bruns' collection of pizza memorabilia in 2015, moved from online and pop-up exhibitions to a physical location in 2018, and offered free admission by reservation while generating revenue through donations and a gift shop. The museum hosted dough-making demonstrations, book signings, and displayed menus, toys, art, vintage ads, and a wood-burning oven. Financial difficulties forced closure in October 2019. Chicago's pizza legacy includes tavern-style pies and the deep-dish innovation by Pizzeria Uno in 1943.
