"One of the things students asked for was to choose seating based on their mood, says Linnea Olsson Lee, a food strategist based in Karlstad. Sometimes you want to sit on your own we've added bar stools facing the window for that without feeling observed. Other times you want to sit in a large group at the communal table, or in smaller, more intimate groups. We've tried to create different zones."
Students at Mariebergsskolan access a morning canteen offering juice shots (ginger and lemon, apple, golden milk, lemon and mint, strawberry and orange) and overnight oats with caramelised milk, with ingredients donated by local supermarkets to reduce food waste. A Vinnova-backed pilot from 2018 transformed the canteen through student workshops into varied seating zones, sound-absorbing curtains and cream walls. Students choose seating by mood, with bar stools for solitude and communal tables for groups. The redesign and free healthy options increased student retention at school, reduced trips to kiosks for sweets, and improved overall engagement.
