"Put the salmon fillets in a bowl. Rub with the tikka paste and yoghurt, season, cover and chill for 1 hour or overnight. Cut the corn kernels off the cobs using a serrated knife. Heat the butter in a large, lidded pan. Add the onion and a pinch of salt and fry over a low-medium heat for 10 minutes or until softened and translucent."
Grilled tikka-marinated Tesco Finest Scottish salmon sits atop spiced orzo studded with sweet corn. Salmon is rubbed with tikka masala paste and Greek yoghurt, chilled, then grilled. Orzo is cooked and tossed with butter, softened onion, garlic, turmeric, cumin seeds and chilli flakes, finished with lemon juice, coriander and mint. A cool mint raita of Greek yoghurt, grated cucumber and chopped mint balances the spice. The plate is finished with Tesco Finest spiced mango chutney and pomegranate seeds. Prep 20 minutes, cook 25 minutes, serves two.
