Mario Llamas operates Mario's Butcher Shop in a Newport Beach strip mall, building a reputation for house-cured and smoked meats and a standout sandwich menu. He cures and ages coppa, soppressata and Genoa salami for an Italian sub and smokes and steams his own pastrami. Llamas worked as a chef in Guadalajara and Mexico City, then apprenticed at West Coast Prime Meats in Southern California.
