It's a reference to another regional delicacy from Buffalo called kümmelweck, also known as beef on weck, or weck for short - another dish that the wing joint offered at the time. German influences combined with the Western New York culinary scene created weck: kaiser sandwich rolls, stuffed with slow-roasted beef slices, and dipped in au jus."
The restaurant began in 1982 when Jim Disbrow and Scott Lowery, New Yorkers who had moved to Columbus, Ohio, wanted authentic Buffalo-style wings. The founders faced an over-8-hour trip to New York to get wings and instead opened a local wing joint. The original name included "Weck" to reference beef on kümmelweck, a Western New York specialty of kaiser rolls with slow-roasted beef dipped in au jus. The menu reflected German and Western New York influences. As the business expanded with branches across Ohio, Indiana, and Colorado, the original name shortened among customers to BW-3.
