"DiSabatino had to convince the Boston Parks Department to give him a food cart license, since there weren't any specific licenses for trucks yet, and he eventually opened Roxy's Grilled Cheese on a city street in Boston. It was a huge success - so much so that Food Network soon contacted him about participating in "The Great Food Truck Race." Word spread even more, and people flocked to Roxy's for its fresh, high quality ingredients and innovative menu of grilled cheese sandwiches."
Boston offers a diverse food scene from North End cannoli to Chinatown dim sum. Roxy's Grilled Cheese launched in 2011 when James DiSabatino, a recent college graduate, chose bread and cheese over a corporate career. Touring Europe and the U.S. with his brother's band inspired him to buy an old food truck, making Roxy's Boston's first of its kind. DiSabatino obtained a food cart license from the Boston Parks Department and opened on a city street. The truck's fresh ingredients and inventive grilled-cheese menu led to rapid popularity and a Food Network appearance. Roxy's now operates a Central Square restaurant in Cambridge alongside the original truck, with the grilled cheese remaining the flagship item.
