Chef Jorge Aguilar recreated Sonoran-style flour tortillas emphasizing thinness, slight chew, high-quality grain, and pork lard. The Border Town pop-ups sold out during the pandemic, prompting Aguilar and co-owner Amanda Rosa to open a sit-down restaurant with co-owner Ben Turley and head bartender Patrick Bradley. Border Town opened January 16 at 189 Nassau Avenue in Greenpoint and currently offers table-service dinner only because the kitchen lacks gas. The space is walk-in only, neighborhood- and family-friendly, has larger tables for groups, and offers $15 drinks to maintain affordability.
