Bar Panisse, a new cocktail bar attached to Chez Panisse, opens Thursday, December 11, and will not take reservations. The bar replaces Cesar, a long-lived Berkeley institution that opened in 1998 at 1515 Shattuck. Chez Panisse held the lease on the adjacent space and subleased it to Cesar, which was co-founded by Stephen Singer, Alice Waters's ex-husband and father of her only child. Cesar pioneered Spanish tapas in the area and was prized as an easier, less-committed option than its neighbor. Cesar closed seven months after Chez Panisse declined to renew the lease. Bar Panisse spent about two and a half years in development and will operate five nights a week, opening at 4 pm.
