Beto's Carnitas & Guisados opens February 20 at 69 Clinton Street on the Lower East Side. Tahiz Gonzalez and Connor Kaminski moved a 2023 carnitas pop-up into a permanent location after building a following. The menu centers on $5 slow-cooked carnitas served in house-made flour tortillas using masa from Masienda, with additional guisados, $13 tortas on Don Perea bolillos, $9 chicharrones gorditas, rice, beans, and guacamole. Gonzalez named the restaurant for her late father, Umberto, and connects the food to Mexico City childhood traditions. The founders transitioned from fine dining to taco kits and brewery pop-ups during the pandemic before opening the restaurant.
