"Behind the restaurant is owner Francisco Perez and Dominguez's mother, Gloria Dominguez, who is the restaurant's chef and culinary consultant. She is also the chef and consultant behind Oakland's Tamarindo Antojeria, which closed in 2019, and Los Altos' Tal Palo, which her daughter and son-in law run. Perez bought the former Flights location, and alongside Dominguez and Dominguez's design studio, 5ten studio, they developed a vision to transform the space into a restaurant celebrating Mexico's culinary diversity."

Owner Francisco Perez and chef-culinary consultant Gloria Dominguez are opening a new Mexican restaurant in Burlingame in the former Flights location, expected to open in March. The 120-plus-seat restaurant will present regional dishes from northern Mexico, Jalisco, Nayarit, Oaxaca and Yucatan. Planned menu highlights include chiles en nogada; a selection of seven Oaxacan moles, including a guava mole; pescado zarandeado from Nayarit; goat birria and tortas ahogadas from Jalisco; and jericallas for dessert. The restaurant will feature a full bar focused on agave-based liquors such as tequila and mezcal, likely with a mezcal sommelier. 5ten studio handled the design.
