Butterscotch Haystacks
"Another holiday favorite that my grannie and mom have made ever since I can remember. You can adjust this and use small pretzel sticks with milk chocolate and almonds, or other combos you can think of. The butterscotch seems to melt in your mouth. 1 package butterscotch chips (11 oz) 1 cup peanuts 5 ounces chow mein noodles (2 1/2 cups)"
"Melt butterscotch chips in a double boiler or microwave. Microwave melting instructions for chips: Heat for 1 minute; stir. Heat for 30 seconds; stir. Repeat heating in 30-second increments, stirring each time, until nearly all chips are melted. Stir well to finish the melting of the last few chips. Add peanuts and chow mein noodles to the melted chips. Stir to coat and combine. Drop by spoonfuls onto wax paper. Leave to set up. Store in an airtight container."
Ingredients include 1 package (11 oz) butterscotch chips, 1 cup peanuts, and 5 ounces (about 2 1/2 cups) chow mein noodles. Melt the butterscotch chips in a double boiler or in the microwave using stepwise heating: 1 minute, stir; then 30-second increments, stirring until nearly all chips are melted, and stir to finish. Fold in peanuts and chow mein noodles, stirring to coat. Drop mixture by spoonfuls onto wax paper and allow to set. Store finished clusters in an airtight container. Variations include substituting small pretzel sticks, milk chocolate, or almonds.
