Vessel Coffee Collaborative, a new cafe in Cleveland's Gordon Square, launched this month through collaboration between coffee professionals Austin Fedor and Jacob Digman. The cafe features roasts from nationally recognized roasters including Little Waves Coffee Roasters of Durham, North Carolina, and Flower Child Coffee of Oakland, California. The ownership group, which includes Digman's husband Cory Hajde, prioritizes customer feedback in selecting coffees and plans to introduce additional roasters for collaborative tasting. The 2,000-square-foot space combines warm design elements with professional-grade equipment including Mahlkönig grinders, Fetco batch brewer, and Synesso espresso machine. Food partnerships with local providers enhance the community-focused experience.
