Sibarist launched Sibarist Professional for commercial customers and introduced a new paper designed for immersion brewing. The HP (high permeability) paper is used to create large brew bags for cafes performing overnight cold brew steeping. It is also used for tea-bag-like single-serve immersion bags for hot or cold coffee, with a business-to-business co-packing service for roasting companies. The company also introduced a manual pourover brewer, the Sibarist Brewing System, intended to leverage the performance of its Fast and B3 paper filters. HP paper is positioned as the highest-permeability paper the company has created so far and is best suited to near-free liquid flow in both directions while submerged and not pressed against a brewer.
"The paper, featuring what Sibarist calls HP (high permeability) technology, is used to make large brew bags for cafes doing overnight cold brew steeping. It is also used for tea-bag-like single-serve immersion bags for hot or cold coffee, including a business-to-business co-packing service for roasting companies."
"Sibarist Co-Founder Joaquim Morató told Daily Coffee News that HP Technology paper is the highest-permeability paper the company has created so far. While it is offered in a conical pourover format called Rarities HP for experimental brewing, it is not a standard option across the company's other filter shapes and sizes, since those methods generally call for one-way liquid flow in brewers where pouring or stirring creates capillary action and turbulence."
"HP paper is best suited to near-free liquid flow in both directions through the filter while submerged and not pressed against a brewer. "For cold brew it works super well, where there's no agitation and we can apply HP technology to do immersion bags, which are like tea bags, but for coffee.""
""While developing our Fast and B3 [filter paper], we developed other papers along the way, and now we are presenting our HP papers and how we apply these new technologies in different applications," Morató told DCN. "For cold brew it works super well, where there's no agitation and we can apply HP technology to do immersion bags, which are like tea bags, but for coffee.""
