The Liquorice Flip serves one and combines 40ml spiced rum (Dark Matter), 10ml liquorice liqueur (Koskenkorva Salmiakki), 10ml 2:1 sugar syrup, 1 egg white and 15ml double cream. All ingredients are measured into a cocktail shaker, sealed and dry shaken to set the egg white. A large handful of ice is added, the shaker is shaken again and the mixture is strained into a chilled nick & nora glass before serving. The recipe is attributed to Matilda and Tom Tsappis of Killiecrankie House in Perthshire, Scotland.
