Clear cocktails, bold flavors - this NYC cocktail bar is anything but basic
Briefly

Musaek is a New York City cocktail bar emphasizing clarified cocktails, which appear clear but are rich in flavor. Clarification methods include agar-agar and milk processes, creating visually appealing drinks. The cocktails support Korean culinary traditions, using ingredients like Korean pear, perilla herb, and nurungji, which enhance the flavor profile. Popular ingredients include omija, known for its complex taste, and plans are in place to incorporate more Korean elements, specifically nokcha, to broaden their offerings.
At Musaek, they use both agar-agar and a milk clarification process. "Agar-agar turns clouded cocktails into crystal clear flavor." First bloom the agar-agar in water, mix into a cocktail, and chill. Filter through a fine mesh.
The milk proteins bind with acids and tannins, and after curdling, strain through the coffee filter until the liquid runs crystal clear. This produces beverages with a deceptively plain appearance that's anything but mild.
Musaek features cocktails with Korean or Asian ingredients. Korean pear, perilla herb, and nurungji are some of the ingredients utilized. The five-flavor berry has a complex combination of sweet, salty, sour, bitter, and even spicy.
Carpo has plans to expand Korean ingredients. He would like to work with nokcha, also known as Korean green tea, to further enhance their cocktail offerings.
