Indienne New York will offer 36 seats with diverse tasting menu options including meat, pescatarian, vegetarian, and vegan selections, opening in May. Elder, a British Indian chophouse featuring dry-aged meats, seafood, tableside desserts, and gin cocktails, opens on the ground floor in summer. Apas, a South Asian-inspired cocktail bar named after the Sanskrit word for water, will also debut in summer on the second floor. Sarkar previously operated Baar Baar in the East Village from 2017 to 2024 and has built an extensive culinary portfolio across multiple cities.
