"1 cup uncooked quinoa 2 cups chicken stock 4 slices bacon 1 medium onion (chopped) 2-3 stalks organic celery (chopped) 1 teaspoon minced garlic or 2 garlic cloves 1 Tablespoon butter 1 cup dried cranberries 1 unpeeled apple (chopped) ½ lb. Italian or turkey sausage ½ cup chopped pecans (toasted) ¼ cup parsley (chopped) 1 Tablespoon fresh thyme or 1-½ teaspoon dried thyme 1 teaspoon dried marjoram 1 ½ teaspoon fresh rosemary or ¾ teaspoon dried rosemary 2 teaspoons dried sage ½ teaspoon nutmeg ½ teaspoon salt ½ teaspoon pepper"
Quinoa stuffing is gluten-free and yields enough to fill a 10 to 12 lb. turkey. Quinoa is cooked in chicken stock for 15–20 minutes until done and set aside. Bacon is browned and drained, and onions, celery, and garlic are sautéed in the bacon drippings. Butter, dried cranberries, chopped apple, Italian or turkey sausage, and the herb and spice mix are added and cooked until the sausage is fully browned. Cooked quinoa, toasted pecans, chopped parsley, and crumbled bacon are stirred in to combine the flavors and textures. The stuffing can be packed into a turkey or baked separately in an oven according to preference.
