Except for maybe the dates, I'll bet you have all the ingredients for these simple date filled cookies sitting in your pantry and waiting to be used. As you will see, there are two parts to this recipe for date cookies. Part one is the cookies, part two is the date filling."

Sweet date-filled sugar cookies use a simple two-part process: a sugar cookie dough and a cooked date filling. Cookie dough combines shortening, granulated and brown sugar, egg, milk, vanilla, flour, salt, and baking soda, chilled for at least an hour. Date filling is made by simmering chopped dates with sugar and water, then adding lemon juice and salt before cooling. Dough is rolled thin, cut into 2 1/2-inch rounds, filled with about one tablespoon of date filling, topped with another round, sealed, and baked. Dried dates offer a concentrated fig-prune-like sweetness that complements the cookies.
