If you had told me twenty years ago that Paris would be the easiest city in the world to be gluten free in, I wouldn't have believed you. How could that be possible? How could the glutinous boulangeries and patisseries of my youth, establishments that follow me in my life story like Proust's madeleines, full of traditional chouquettes and baguettes, now have ceded brick and mortar room on the avenue to buckwheat flour and rice flour?
My entire family-my husband, my two sons, and myself-are all gluten free. My husband has celiac disease, my older son has a wheat allergy, and my younger son gets wheat-induced eczema.
