"I really loved Washington," he recalled. "I came down here, and it was the same kind of feeling. It was beautiful - the redwoods, the forest, the ocean."
"When I lived in Chicago, I'd fall asleep to sirens and noise," he said. "Now, the quiet is really nice. And there's no light pollution, so you can see the moon and the stars."
"There aren't many restaurants in places like this, out in the middle of nowhere, doing the kind of food that I like to cook," he said, pointing to the local and sustainable ingredients.
Much of its identity is rooted in the environs, enticing diners, as well as staffers who have made a life for themselves in this remote corner of California.
