Pizza as we know it showed up in New York City around 1905 at Lombardi's in Little Italy, though the city had precursors that were closer to focaccia late in the previous century.
The poached pear and gorgonzola square is unforgettable, and evidence of Mama's originality. There's another location in the West Village.
