In 2016, a trip to Sicily commenced with challenges regarding malfunctioning appliances in the grandparents' home. The cooker, a connection to the partner's grandmother, was serviced but deemed unreliable. The focus shifted to the preparation of traditional dishes like scacce ragusane, characterized by its dough wrapped around a filling of tomato, onion, and cheese. Ragusano cheese, a staple from the local provinces, served as the primary cheese used. Variations could include additional anchovies in the filling for enhanced flavor.
When we arrived in 2016 the oven, fridge and washing machine all had problems getting going. So much so that we replaced two of them.
Scacce means squashed, and refers to the way the dough is wrapped and squashed around a rich filling of tomato, onion and cheese.
Traditional cheese is ragusano, a firm cow's milk cheese made in the provinces of Ragusa and Syracuse, effective and tasty as cheddar.
There is also no reason you couldn't add a few anchovies to the tomato mix, too.
