Scientists at Seattle-based Atomo Coffee recently put their (likely sufficiently caffeinated) minds together and created a drink that's the same as coffee on a molecular level, but is made without using any coffee beans.
Their espresso, for example, is made using date seed, ramon seeds, sunflower seed extract, fructose, pea protein, millet, lemon, guava, defatted fenugreek seeds, caffeine, and baking soda.
Currently, Atomo's beanless coffee is being brewed exclusively at Gumption Coffee's Midtown location -Australian roasters of specialty coffee-so us lucky New Yorkers can get the first sip.
