"It's a display of Asian bread culture, with a French point of view. Knowing roots is important." Ansel emphasizes the importance of heritage in creating his new bakery, Papa d'Amour, which reflects his children's dual heritage.
"I felt like a child," Ansel recalls of his initial encounters with Chinese cooking after meeting his Taiwanese wife. His journey into this new cuisine opened up a world of culinary creativity.
"My mother-in-law was particularly tough. I knew I was mastering my skills when she would say, 'It's not bad,' with a smile," Ansel reflects on the challenging yet rewarding experience of learning to cook Asian recipes.
The upcoming bakery will serve dishes inspired by his children's favorites, including fluffy steamed buns and egg tarts, showcasing the fusion of French and Asian flavors.
