Stable Wines is on Essex Road in Islington and occupies a former donut shop with a huge basement that used to be a bank. The basement retains bank doors and a converted gold bullion room that forms a cosy space with a big shared table and a circular wine wall. The venue shares DNA with Goodbye Horses and The Dreamery and offers excellent wines alongside a short, changing menu that includes Guinness rarebit oysters, steak tartare on toast, tomato tartine, and whole fried Mont D'Or. The wine list emphasizes low-intervention bottles, pét-nats, skin-contact orange wines, and chilled reds, with bottles at retail plus a £20 corkage. Booking is available for parties of six or more; otherwise the venue operates as walk-in.
