""The biggest way I found to be impactful and interesting on whiskey was double barreling," he says. "I doubled down on the maturation component, using this big inventory of barrels with different profiles, and then created one-off blends with them." 2XO Oak Series comprises American Oak, French Oak, and White Oak Rye releases created by Dixon Dedman. The brand name reflects additional oak exposure achieved by inserting stainless steel chains threaded with charred American white oak stave pieces into finished barrels. The White Oak Rye uses a 95% rye mash bill and the series bottles at 46% ABV. The chains provide similar oak surface area to a new barrel while reducing cost to roughly 20% of new-barrel expense, enabling retail prices near $50. The series has earned awards, including a Double Gold for American Oak Bourbon at the 2025 San Francisco World Spirits Competition.
