Leftover turkey and the carcass become a turkey biscuit pot pie with a warm, comforting filling and flaky biscuits. Biscuits are made from flour, baking powder, sugar, salt, cream of tartar, grated cold butter, and buttermilk; the dough is folded, rolled, cut into 10–12 rounds, and refrigerated for 30 minutes. The filling begins with turkey fat, diced onion, carrots, celery, bay leaf, garlic, thyme, salt, and pepper, and is thickened with flour. Cold turkey stock is added in stages, then chopped leftover turkey and Tajín seasoning are mixed in before assembling in a casserole.
