Researchers found that a diet of vegetables, fruits, and healthy oils was associated with lower rates of preeclampsia among low-income Latinas, outperforming the Healthy Eating Index-2015. Dietary recommendations for pregnant Latinas should include more foods from their culture for better health outcomes.
Preeclampsia affects about 5% of pregnancies in the U.S. and is a significant cause of maternal morbidity. It occurs mainly in the third trimester and is tied to obesity, hypertension, and other health conditions.
